Executive Chef and Culinary Director Taylor Burr Viriña : “#CoastalFare has been a 3… 4 year project that’s been in development and definitely much longer than I initially imagined to launch. It was meant to share the various fare – the cuisines — of areas and markets that have influenced our culinary journey. But how it has evolved, was this community that had the same taste, the same yearning to highlight how food will always bring people together. As Anthony Bourdain shared, you get to sit for a moment and understand the person across the table from you. A moment that may never have occurred, if one didn’t leave their comfort zone and traveled with no reservations.
Executive Sous Chef Blaze Madison Viriña at AT&T Texas : “#CoastalFare highlights the cities and communities we have lived in throughout my life — the East Coast in New York, the Gulf Coast of Texas, and now Cape Cod in Massachusetts where I’ve opened up Pelican Club for Ring on Hook Hospitality and The Newes from America for Life House (NYC). I’ve always enjoyed living by the water, whether it was in Manila’s Roxas Boulevard or by the East River in Manhattan. I remind myself the fare of one’s journey, the sacrifices one makes along the way to pursue what one wants of one’s life. And for many of us, the price is heavy and not easy to simply part with.”
